It’s National Dessert Day, and if you’re on your own this means a whole new world of desserts to enjoy.
With the holidays here, I thought I’d make a batch of some delicious, healthy desserts for the occasion.
I’ve got zumbo, brownies, brownie bites, and chocolate ice cream.
1/2 cup butter, melted 2/3 cup sugar 2/4 cup whole milk 2 tbsp brown sugar 1 tsp vanilla extract 1 tbsp almond extract 1/4 tsp salt 1/8 tsp baking powder 1/2 tsp baking soda 1/3/4 c powdered sugar, plus more for dusting (optional)1/3 c sour cream (or a combination of sour cream and milk)1 tbsp apple cider vinegar, to taste1 tsp vanilla (or agave nectar)2 tsp almond extract, or vanilla extract for dust1/4 t salt1 tsp cinnamon2 t coconut oil, or olive oil2 large eggs, at room temperaturePreheat oven to 350 degrees F. Combine butter, sugar, and milk in a medium saucepan over medium heat.
Add vanilla extract, almond extract and salt.
Sift in sour cream, apple cider and vinegar.
Pour mixture into a greased 9 inch springform pan.
Bake for 15-20 minutes or until golden brown and bubbly.
Cool completely on a wire rack.
Make your cookies:Combine all ingredients in a large bowl.
Add sour cream or apple cider to taste and dust with baking powder.
Spread mixture evenly on lined baking sheet and bake for 15 minutes or so, or until toothpick inserted into center comes out clean.
Cool completely.
Place cookies on parchment paper-lined baking sheet.
Repeat until cookies are all baked.
If using agave, drizzle with 1/5 c of honey or honey and cinnamon.
Cake them up!
Pour cooled zumbo mixture over your favorite dessert.
