They can be a little pricey, but if you do make them, here are some great options for you to make at home.
I know it’s a challenge to keep the ingredients simple, but here are a few ideas for making your own desserts.
What you need to make a dessert for busy moms.
I’ve had a few recipes with coconut milk and vanilla extract, but the coconut milk one was the easiest.
You’ll need a blender and a mixer, along with some whipped cream.
Makes about 1 1/2 cups (2 1/4 sticks) coconut milk or ½ cup (2 teaspoons) vanilla extract 1 cup (240 ml) water or 2 cups (480 ml) heavy whipping cream 1 cup almond meal or 1 cup chopped pecans 1 teaspoon vanilla extract or 1 teaspoon pure vanilla extract Melt the coconut oil in a large pot.
Add the water and the coconut and bring to a boil.
Reduce the heat to low, and cook for about 2 minutes.
Remove the lid and let the mixture cool.
Use a whisk to blend the almond meal into the water.
Mix the vanilla extract into the almond mixture.
Whisk until combined.
Use a pastry brush to brush the coconut mixture onto the top of the cupcakes.
Bake at 350° for about 15 minutes or until the top is golden.
Allow to cool for 5 minutes before you decorate them.
You can also use these sweet treats to make meringues, candies, or toasts.
I have a bunch of these in my freezer and love them!
I made these to serve as gifts to my kids and to celebrate the holidays.
They’re easy to make, sweet, and delicious.
They also make great leftovers.
