You’ll also need:• 1 cup flour (1/2 cup unsweetened cocoa powder)• 1/2 teaspoon baking powder• 1 teaspoon salt (or more if you want a thicker consistency)• 3 tablespoons of coconut oil (or coconut-free margarine)• a large bowl or pan for mixing the ingredients• 1 large egg• 1 tablespoon coconut sugar (or maple syrup)• coconut milk, for making the batter• chocolate chips (optional)For the crust:• 2 tablespoons butter, melted• 1 1/4 cups of coconut milk (or other non-dairy milk)• 2 cups of flour (3/4 cup plus 1 tablespoon)• chocolate for topping• a pinch of salt• 1 small egg• 3/4 teaspoon baking soda (optional for more crunch)• sugar (optional, for a thicker crust)To make the batter:1.
Preheat the oven to 350 degrees Fahrenheit.2.
In a large, bowl, whisk together the dry ingredients: cocoa powder, baking powder, salt, and coconut oil.
Add in the dry and mix well.3.
Add the wet ingredients: coconut milk and flour, and mix until well-combined.
Add a little more water if it’s too dry.4.
Mix in the egg and coconut sugar, and the coconut milk mixture.
Mix until just combined.5.
In another large bowl, stir together the chocolate chips, coconut sugar and cocoa mixture.
Add to the dry mixture.6.
Pour the batter into prepared baking dish and bake for 20 minutes or until a toothpick comes out clean.
The edges will be golden brown.7.
Remove from the oven and cool for about 10 minutes, then serve.
