I used to love making keto and paleo recipes, but I didn’t know how to do it.
And when I started using the internet, I found the recipes I loved to make and shared with my friends, but didn’t want to be a full-time chef.
That was a big turnoff for me.
I knew I needed a way to get my creative juices flowing, and I thought about how I could make my own keto cookies and bake them.
After searching for ideas online, I ended up with the recipe for The Sweetest, Easiest and Healthiest Homemade Keto Cookies.
I was hooked!
I started making them right away and loved every minute of it.
I used my favorite baking powder and sugar and they were perfect.
They were easy to make, had no baking soda, and were incredibly fluffy and delicious.
I’ve tried many other variations of this recipe and it still holds up with all of them, but the original recipe is my favorite!

Recipe Ingredients: For the crust: 2 cups butter, softened 1/2 cup sugar, plus more for dusting 3/4 cup all-purpose flour 1 teaspoon baking powder 1 teaspoon salt 1/4 teaspoon ground cinnamon 1 cup granulated sugar 1 teaspoon vanilla extract For the filling: 1 large egg 1/3 cup all purpose flour 1/8 teaspoon baking soda 1/16 teaspoon ground cloves 1/6 teaspoon salt 2 tablespoons (15 ounces) coconut oil (melted) For the chocolate chips: 1/5 cup granulate sugar For the ice cream topping: 1 cup cream cheese, softened 2 cups heavy whipping cream 1 tablespoon granulated sugars 1 tablespoon vanilla extract 1 teaspoon cinnamon For the dipping: 1 tablespoon almond extract 1/9 cup powdered sugar Directions: Preheat oven to 350 degrees F. Line a 12-inch square baking pan with parchment paper.
In a large bowl, whisk together butter, sugar, flour, baking powder, salt, and cinnamon until smooth.
Set aside.
In another bowl, mix together egg, heavy whipping creamer, cream cheese and sugar.
Add to the egg mixture, beating well.
Add in vanilla and cinnamon and beat until combined.
Stir in coconut oil.
Spread a thin layer of batter onto prepared pan and bake for 15 minutes.
Remove from the oven and let cool for 15 to 20 minutes.
Cut the cookies into 3/8-inch slices and top with chocolate chips.
To assemble: In a small bowl, combine powdered sugar, almond extract, powdered sugar and ice cream.
Place the cookies on a parchment-lined baking sheet and refrigerate for 10 minutes.
To make the filling, combine cream cheese with coconut oil and beat for 10 to 15 minutes until smooth and creamy.
Drizzle with almond extract and serve with dipping chocolate chips and dipping chocolate.
